Bivalve mollusks are filter feeders, that is, they capture their food by filtering a large amounts of water, retaining particles and microorganisms. Mainly unicellular algae, however, when there is a certain degree of contamination, they concentrate it inside them several orders of magnitude higher than that found in the middle.

 

Depuration is a process that consists of immersing mollusks in clean seawater in such a way that the animals can resume their normal physiological activity and expel microbial contaminants from the intervalvar cavity, their gills and intestinal apparatus for a period of time, which can vary from a few hours to several days, depending on the species and its origin.

 

The fundamental principles are:

 

  • Resuming filtering activity so that pollutants can be expelled, this implies maintaining correct conditions of salinity, temperature and dissolved oxygen.
  • Eliminating pollutants by induced water flow through the shellfish, applying the correct purification conditions for an adequate period of time.
  • Avoiding recontamination, applying a batch treatment system and using clean seawater in all stages of purification as well as avoiding the re-suspension of the expelled and sedimented material.
  • Maintaining our products’ quality and traceability based on the correct handling before, during and after purification.

In addition to offering our selected products, at Escobedo’s MARISCOS VIVOS we purify the seafood that is fished in the province of Málaga, mainly the Baby Clam, the Wedge Clam and the Smooth Clam, in compliance with the regulations that require the purification of bivalve molluscs in our waters.

 

We maintain this service closely coordinated with the Fishermen’s Guilds of Malaga port, which guarantees food safety and traceability in strict compliance with the legislation. Our label is synonymous with our guarantee, both in our selected products and in those, in which we carry out the purification process for their subsequent sale at auction.

Our live seafood is an exquisite alimentation with a delicate sea flavor and great nutritional value. However, it is not without health risks, so it is very important to know its origin. At Escobedo’s MARISCOS VIVOS, we select the best products from local artisanal fishing and aquaculture, produced in natural environments free from contamination.

 

We carry out a strict quality control throughout the process from reception to destination, maintaining the cold chain, carrying out continuous sampling and analysis of the physical-chemical and microbiological parameters of water and the product itself. We maintain the traceability of each batch at all times.

 

At Escobedo’s MARISCOS VIVOS, we have implemented a Hazard Analysis Program and Critical Control Points (HACCP) that guarantee the safety of the processes.

 

We have facilities equipped with the latest technology in processes for the purification and maintenance of live seafood and the most valuable asset, our team of professionals, who carry out their work with the utmost dedication to offer you a unique experience.
